Ingredients:
80g raw salmon fillets, patted dry with a paper towel1/2 cup honey1/4 cup soy sauce4 tbsp. lemon juice1 tsp. red chili flakes or crushed black pepper5 tbsp. canola oil or 100g butter1tbsp flour (if required)5 cloves crushed garlic
Salt to taste
For garnishing and to accompany:
Parsley fresh
10 Fine green beans100g Broccoli2 Carrots2 Potatoes
Method:
- Marinate the salmon fillets with salt and pepper
- In a bowl, whisk together honey, soy sauce, lemon juice and red chili flakes.
- Heat 2 tbsp oil or butter in a skillet. When oil is hot but not smoking, add salmon.
- Cook salmon until deeply golden for 6 minutes, then flip over and add remaining oil
- Add crushed garlic to the skillet and cook for 1 minute.
- Add the honey mixture and sliced lemons and cook until sauce is reduced by about 1/3. Drizzle salmon with the sauce.
- Serve to a rectangular white ceramic dish, garnish with fine beans or broccoli, mashed potato, carrot and parsley on the side.
For garnishing and to accompany:
Boil water and pour on the washed broccoli, fine beans, carrots and cover for 5-6 minutes. Drain water and keep aside. Meanwhile cook the potato cut in to cubes in water for 10 minutes. Peel off the potato and mash it with 1 tsp of butter, salt and pepper. Or leave as cubes.
Heat a separate pan, add ½ tbsp. butter. Add the vegetables and toss for 5 minutes. Ensure preserving the colour in vegetables.
Serving instructions
Place 2 tbsp of mashed potato on a white rectangular ceramic dish and keep the salmon on the side covering half of the mash potato. Serve the vegetables separately without mixing them. Pour the sauce from the pan covering the slice of salmon and part of potato. 2 thin slices of lemon on the side of salmon. Lastly, a sprig of fresh parsley or rosemary over the slice of salmon.
